Chocolate
Chip Banana Muffins
Ingredients:
2 cups flour
1 cup potato starch
4 mashed bananas
2/3 cup mashed tofu
1 cup chocolate chips
1 cup soy milk
½ cup canola oil
1 tablespoon vanilla
1 cup brown sugar
5 tablespoons baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
Directions:
Preheat oven to 350 degrees.
Mix together the flour, starch,
cinnamon, baking soda and baking powder.
Mix and stir well.
Add the sugar and mix well.
In another bowl, mix the bananas, oil,
soy milk, vanilla and tofu.
Beat together well the tofu mixture
until smooth.
Add the tofu mixture to the dry
ingredients.
Stir and mix well.
Stir in the chocolate chips.
Spoon the mixture into oiled muffin
tins.
Bake for 40 minutes.
Ready to serve.
